The Class
In this specialty class, you’ll learn all about the three main types of seafood. We will cover the finer points of hot and cold smoking, discuss whether to cure or not to cure, and share our secret five-step system for grilling a whole fish. This will be demonstrated with red snapper over live fire. You will also learn how to properly shuck oysters and char-grill them to perfection with our delicious BBQ compound butter. This class features composed dishes with a heavy use of live fire in creating the sauces and accompaniments. Yes, you get to eat it all. You will leave as the captain of any get-together and a Certified Backyard Seafood Pitmaster!
