The Class
Built on a foundation of years of knowledge, our ChickensU class imparts the wisdom you need to smoke, grill, and even rotisserie a chicken like a pro, but in the comfort of your own backyard. In addition to the 411 on chicken: anatomy, types, and selection, we go over the pros and cons of injection and brining, how to spatchcock a chicken, the 8-piece breakdown, and trussing. Once each chicken is crispy and cooked, we will show you how to slice and carve it, earning you the coveted Certified Backyard Chicken/Pitmaster designation.
The venue
The first Celis Brewery opened on July 11th in 1992. It was an immediate success. Turns out Texans really liked his beer! Before the Belgian arrived, most Texans were drinking one of the big three brands on the market. The small craft breweries that we all know and love today simply did not exist. When Pierre Celis started brewing his beloved beer, he created a craft beer that changed everything.
Exactly 25 years to the day it first opened, the legendary beer is back, better than ever at Celis Brewery 2.0. Along the way in the Spring of 2011, Pierr Celis passed. But Pierres spirit and his commitment to quality lives on along with his original yeast strain.
